Food Enzymes
The FEZ Panel is responsible for the safety assessment of food enzymes from various sources.
FEZ Panel Members are scientists from across Europe with expertise in:
- Chemistry - Biochemistry and food chemistry
- Microbiology - Food microbiology
- Molecular biology - Bioinformatics and whole genome sequencing
- Food Technology – Food engineering and bioprocessing
- Toxicology – Genotoxicity, systemic toxicity and regulatory toxicology
- Allergenicity
- Dietary exposure - Deterministic and probabilistic tools, food composition and food classification system
* The FEZ Panel continues the work of the former Panel on Food Contact Materials, Enzymes and Processing Aids (CEP), with a focus on the food enzymes area, whilst the responsibility for the evaluation of Food Contact Materials has been handed over to the FCM Panel. In addition, depending on the specific expertise required, the safety assessment of some processing aids will be allocated either to the FEZ Panel or to the FCM Panel.
